Flying Fish is “the” place to be for world class seafood and magnificent views of the Sydney Harbour Bridge, Balmain and Darling Harbour from the end of the heritage listed Jones Bay Wharf.

Jones Bay Wharf is an historic Australian landmark that has been in operation since 1911. In its early days, the site was the arrival point for many of Australia’s European immigrants and the point at which many of our brave soldiers departed for duties overseas. Later, the site became a wool store until two years ago when it’s current redevelopment began. Not surprisingly, Peter Kuruvita, part owner and executive chef of Flying Fish is delighted with the results of the wharf’s latest incarnation.

 

“There has been a tremendous amount of work put into this project by many talented people and my partner and I are thrilled with the results of their efforts” Peter told guests at the opening. Among those praised were Michael McCann of the architectural firm Dreamtime Australia, Michael Wolf of construction firm Arkon Australia and Suzie Leonard of Catershop, who fitted out the restaurant’s kitchen.

 

When asked about his involvement in Flying Fish, Mr. McCann said “It has been a pleasure to work on this project. Flying Fish is one of the premier fine dining restaurants in Sydney. It has spectacular views across East Balmain all the way to the harbour bridge, a 900 bottle wine selection and a wonderful seafood menu prepared by a team of chefs that have worked in some of the finest restaurants in the world.”

 

Suzie Leonard echoed those sentiments saying “Peter and his team are great. Peter has worked with restaurateurs of the calibre of Neil Perry and Greg Doyle; he was the owner-operator of Bondi for many years and was the executive chef at Hayman Island. He knows his way around a kitchen and knows what he wants.”

 

“When it came to meeting the refrigeration needs of Flying Fish for example, we thought it best to install a range of purpose-built and off-the-shelf cabinets from Williams Refrigeration. When we mentioned this to Peter he said, ‘Great, I’ve used equipment from Williams Refrigeration many times before and they’ve never let me down once’.”

 

Flying Fish have installed just some of the large range of Williams Refrigeration cabinets, including 2 (model FZ18) purpose-built self-contained refrigerated units specifically designed by Williams to hold raw fish pieces for long periods while maintaining their ideal moisture content. Among the standard Williams cabinets are 2 (model C6504R) four door back bar display refrigeration cabinets (also used by the Sydney Casino, other 5-star hotels and many high profile clubs and pubs), 4 remote undercounter cabinets including one utilizing a mixture of drawers and doors and 2 compact under-counter freezers (models LO1R and LO1U).

 

So, what does Peter Kuruvita think of his new kitchen? “It’s great. The purpose-built fish cabinets keep our fish fresh and moist and the standard cabinets were easy to fit into our design. Some cabinets have drawers that improve space utilization. I’m really looking forward to my team of chefs working their culinary magic in this kitchen for many years.”
